Holly’s Hill Winery. Located at 2,700 feet in elevation in the Pleasant Valley region. The estate vineyards are composed entirely of Rhone varieties including Viognier, Roussanne, Grenache, Mourvedre, Syrah and Counoise. This enthusiasm for Rhone varieties started when the owners, Tom and Holly Cooper, shared their first bottle of Chateauneuf du Pape on their honeymoon! Their daughter, Carrie Bendick, is the co-winemaker, with her husband Josh, at Holly’s Hill. Carrie uses traditional winemaking methods, choosing not to over-manipulate the grapes, so that the flavour comes through in the wine. She has travelled to the Rhone region of France to learn more about her craft from long established producers.
